TASMANIAN GHEE

Baked apricots
METHOD
Halve apricots, remove kernel, add half a teaspoon of Golden Caramel Ghee on each and bake until golden
INGREDIENTS
Organic fresh apricots
Gold42 sweet Golden Caramel Ghee
Side suggestions: Yogurt, whipped cream, ice cream or edible flowers
Sweet and salted Golden Caramel popcorn
METHOD
In a medium pot add a spoon of Golden Caramelghee and 4 popcorn kernels on the stove on medium heat with the pot lid on
As soon as the four kernels pop, remove them from pot. Add another 2 tablespoons of Golden Caramelghee and the amount of popcorn you wish to make
Place the lid on and wait till popping starts. Move the pot side-to side occasionally so that any popcorn on the bottom does not burn
Once the majority of popcorn has popped, remove from heat. Add additional ghee, pinch of salt or two and additional sweeteners until desired flavour is achieved

Pinch of sea salt
Honey / maple syrup / stevia for additional sweetness
Chickpea breakfast burger
METHOD
Boil chickpeas, then simmer for about 30 minutes until soft
Mash chickpeas in a bowl and add all other ingredients
Combine well and add a small amount of chickpea flour and water to adjust consistency for binding ingredients
Form mixture into burger shapes
Add a tablespoon of ghee to a fry pan and cook burgers on both sides until golden brown
Top with home-made mayonnaise, chutney, a ghee fried egg or some sprouts

Overnight soaked chickpeas
Grated carrot and zucchini
Finely sliced onion
Fresh coriander and parsley
Sea salt
Spices: pepper, coriander, cumin, cayenne and turmeric powder
Chickpea flour
Baked fish
METHOD
Coat fish in spices, herbs, lemon and salt
Place in oven baking dish with approx 3 table spoons of ghee
Bake in oven until fish is cooked all the way through

Lemon juice
Spices: chilli powder, ajwain seeds, turmeric, pepper
Herbs: fenugreek leaves / coriander / parsley
Garlic & Herb zucchini, fetta and ghee fried egg
METHOD
Cut a zucchini into approx 1cm thick slices
Add 1-2 tablespoons of Garlic and Herb ghee to a pan on medium heat
Cook zucchini on both sides until golden brown
Sprinkle with salt and pepper / chilli
Top with some crumbled fetta and an egg fried in a table spoon of Garlic & Herb Ghee

Organic free-range egg
Pinch of salt, pepper / chilli
Baked potatoes in Garlic & Herb ghee
METHOD
Slice potatoes and space out on an oven tray
Sprinkle a pinch of salt over potatoes as well as 2-3 tablespoons of Garlic & Herb Ghee in the tray
Cook for a few minutes in oven
Once ghee is melted, pull out tray and flip potato slices to ensure the ghee coats them well
Continue baking potatoes until golden brown and crunchy
